Braised Radish Chunks
Summary:
This is a glossy, tender, and flavorful vegetarian dish, where radish absorbs the rich braising sauce, making it perfect to pair with rice.
Ingredients:
White radish 500g
Soy sauce 2 tbsp
Dark soy sauce 1 tbsp
Vegetarian oyster sauce 1 tbsp
Rock sugar 10g
Salt to taste
Star anise 1 piece
Bay leaves 2 pieces
Cooking oil 1 tbsp
Water as needed
Instructions:
1.Prepare ingredients:
Peel and cut the radish into large chunks.
2.Blanching:
Bring a pot of water to a boil, blanch the radish for 2 minutes to remove the raw taste, then drain.
3.Caramelizing sugar:
Heat oil in a pan, add rock sugar on low heat, and stir until it melts into a reddish-brown syrup.
4.Braising:
Add the radish chunks, stir well, then add soy sauce, dark soy sauce, vegetarian oyster sauce, star anise, and bay leaves. Stir evenly, then add enough water to cover the ingredients.
5.Simmering and finishing:
Cover the pan and simmer on low heat for 15-20 minutes until the radish is tender and fully infused with the sauce. Turn to high heat to reduce the sauce, then serve.
