素炸藕盒

简介:
这是一道外酥里嫩的传统斋食小点,以莲藕夹入香菇蔬菜馅料油炸而成,口感层次分明而清香不腻。

材料:
莲藕 300克(切成连刀夹片)
鲜香菇 80克(切末)
胡萝卜 50克(切末)
嫩豆腐 100克(压碎)
盐 适量
白胡椒粉 适量
酱油 1汤匙
面粉 80克
清水 适量(调成面糊)
食用油 适量(用于油炸)

做法:

1.准备食材:
莲藕去皮洗净,切成两片相连的夹刀片;香菇、胡萝卜切末,豆腐压碎备用。

2.调制馅料:
将香菇末、胡萝卜末与豆腐混合,加入盐、白胡椒粉和酱油拌匀成素馅。

3.填入藕夹:
将调好的素馅均匀填入每个藕夹中,轻压固定。

4.调制面糊:
面粉加入适量清水搅拌成顺滑面糊,浓稠度以能包裹藕盒为宜。

5.油炸定型:
锅中加油烧至六成热,将藕盒裹上面糊后放入油中,中火炸至表面金黄酥脆,捞出沥油。

6.完成装盘:
待油温升高后复炸10秒使其更酥,捞出控油即可食用。

Vegetarian Deep-Fried Lotus Root Sandwiches

Summary:
This is a crispy vegetarian snack made by stuffing lotus root slices with a savory mushroom and vegetable filling, then deep-frying until golden and crunchy outside while tender inside.

Ingredients:
Lotus root 300g (cut into connected sandwich slices)
Fresh shiitake mushrooms 80g (finely chopped)
Carrot 50g (finely chopped)
Soft tofu 100g (mashed)
Salt to taste
White pepper powder to taste
Soy sauce 1 tbsp
Flour 80g
Water as needed (to make batter)
Cooking oil as needed (for deep-frying)

Instructions:

1.Prepare ingredients:
Peel and wash the lotus root, slice into connected sandwich pieces. Finely chop mushrooms and carrot, mash tofu.

2.Make filling:
Mix mushrooms, carrot, and tofu. Add salt, white pepper, and soy sauce. Stir well to form the vegetarian filling.

3.Stuff lotus root:
Fill each lotus root slice with the prepared mixture and press gently to secure.

4.Prepare batter:
Mix flour with water into a smooth batter thick enough to coat the lotus root evenly.

5.Deep-fry:
Heat oil to medium (about 60% heat). Coat each stuffed slice with batter and fry until golden and crispy. Remove and drain.

6.Finish and serve:
Increase oil temperature slightly and refry for 10 seconds for extra crispness. Remove and drain before serving.
