油焖春笋
简介:
这是一道咸香微甜的斋食家常菜,春笋鲜嫩清甜,经油焖后充分吸收酱香,口感醇厚而不腻。
材料:
春笋 300克(切滚刀块)
生抽 1汤匙
老抽 1茶匙
白糖 1汤匙
盐 适量
白胡椒粉 适量
食用油 1.5汤匙
清水 100毫升
做法:
1.准备食材:
春笋去壳洗净,切成滚刀块备用。
2.焯水去涩:
锅中烧开水,放入春笋焯水2分钟,去除涩味后捞出沥干。
3.热锅煸炒:
热锅加入食用油,放入春笋中火翻炒约1分钟,使表面微微金黄。
4.调味焖煮:
加入生抽、老抽、白糖和清水,翻炒均匀后转小火焖煮约5分钟,使春笋充分入味。
5.收汁装盘:
待汤汁略微收浓,加入适量盐和白胡椒粉调味,翻炒均匀后关火,盛出即可。

Braised Spring Bamboo Shoots
Summary:
This is a savory and slightly sweet vegetarian dish where tender spring bamboo shoots are gently braised to absorb a rich soy-based sauce.
Ingredients:
Spring bamboo shoots 300g (cut into chunks)
Soy sauce 1 tbsp
Dark soy sauce 1 tsp
Sugar 1 tbsp
Salt to taste
White pepper powder to taste
Cooking oil 1.5 tbsp
Water 100 ml
Instructions:
1.Prepare ingredients:
Peel and wash the spring bamboo shoots, then cut them into bite-sized chunks.
2.Blanch bamboo shoots:
Bring water to a boil and blanch the bamboo shoots for 2 minutes to remove bitterness. Drain well.
3.Stir-fry bamboo shoots:
Heat cooking oil in a pan, add the bamboo shoots, and stir-fry over medium heat for about 1 minute until lightly golden.
4.Braise with seasoning:
Add soy sauce, dark soy sauce, sugar, and water. Stir well, then reduce to low heat and braise for about 5 minutes.
5.Finish and serve:
When the sauce slightly thickens, season with salt and white pepper powder, mix well, then turn off the heat and serve.
