豉汁苦瓜
简介:
这是一道咸香微苦的斋食家常菜,苦瓜清爽解腻,搭配豉汁提升层次,快炒入味。
材料:
苦瓜 250克(去瓤切片)
豆豉 1汤匙(轻微压碎)
生抽 1汤匙
白糖 0.5汤匙
盐 适量
白胡椒粉 适量
食用油 1汤匙
做法:
1.准备食材:
苦瓜洗净去瓤切片,豆豉略微压碎备用。
2.焯水去苦:
锅中水烧开,加入少许盐,将苦瓜焯水约1分钟,捞出沥干。
3.爆香豉汁:
热锅加油,放入豆豉小火翻炒出香味。
4.翻炒苦瓜:
加入苦瓜,大火快速翻炒均匀。
5.调味收汁:
加入生抽、白糖、盐和白胡椒粉,翻炒至入味后关火装盘。

Black Bean Sauce Bitter Melon
Summary:
A savory vegetarian dish with a slight bitterness from bitter melon, enhanced by fermented black bean sauce for depth of flavor.
Ingredients:
Bitter melon 250g (sliced, seeds removed)
Fermented black beans 1 tbsp (lightly crushed)
Soy sauce 1 tbsp
Sugar 0.5 tbsp
Salt to taste
White pepper powder to taste
Cooking oil 1 tbsp
Instructions:
1.Prepare ingredients:
Wash, deseed, and slice the bitter melon. Lightly crush the black beans.
2.Blanch:
Boil water with a pinch of salt, blanch bitter melon for 1 minute, then drain.
3.Stir-fry sauce:
Heat oil, add black beans, and stir-fry until fragrant.
4.Add bitter melon:
Add bitter melon and stir-fry over high heat.
5.Season and finish:
Add soy sauce, sugar, salt, and white pepper, stir well, then serve.
