凉拌苦瓜

简介:

这是一道清凉爽口的斋食凉菜,苦瓜微苦回甘,口感清脆,简单调拌即可清热解腻。

材料:

苦瓜 300克(切薄片)
盐 适量
米醋 1.5汤匙
白糖 1汤匙
生抽 1汤匙
香油 1茶匙
白胡椒粉 适量

做法:

1.准备食材:
苦瓜洗净,对半剖开去瓤,切成薄片备用。

2.去苦处理:
在苦瓜中加入少许盐抓匀,静置10分钟后挤去水分。

3.焯水定脆:
锅中水烧开,将苦瓜快速焯水约30秒,捞出后立即过冷水,沥干备用。

4.调味拌匀:
加入米醋、白糖、生抽、白胡椒粉和香油,拌匀入味。

5.完成装盘:
静置5分钟后装盘,即可食用。

Cold Tossed Bitter Melon

Summary:

This is a refreshing vegetarian cold dish, featuring crisp bitter melon with a mild bitterness and a clean, cooling taste.

Ingredients:

Bitter melon 300g (thinly sliced)
Salt to taste
Rice vinegar 1.5 tbsp
Sugar 1 tbsp
Soy sauce 1 tbsp
Sesame oil 1 tsp
White pepper powder to taste

Instructions:

1.Prepare ingredients:
Wash the bitter melon, cut in half, remove the seeds, and slice thinly.

2.Reduce bitterness:
Add a little salt, mix well, and let sit for 10 minutes, then squeeze out excess water.

3.Blanch briefly:
Bring water to a boil, blanch the bitter melon for about 30 seconds, then transfer to cold water and drain.

4.Season and mix:
Add rice vinegar, sugar, soy sauce, white pepper powder, and sesame oil. Mix well.

5.Finish and serve:
Let sit for 5 minutes to absorb flavors, then serve.
