红烧豆干花生

简介:

这是一道咸香浓郁的斋食家常菜,豆干紧实入味,花生软糯回甘,小火慢烧呈现醇厚风味。

材料:

豆干 200克(切块)
花生 100克(提前浸泡2小时)
生抽 2汤匙
老抽 1茶匙
白糖 1汤匙
盐 适量
八角 1个
清水 适量
食用油 1汤匙

做法:

1.准备食材:
豆干切块备用,花生提前浸泡至略微膨胀,沥干水分。

2.焯水处理:
花生放入沸水中焯煮2分钟,捞出备用。

3.热锅煸香:
热锅加油,放入八角,小火煸出香味。

4.翻炒主料:
加入豆干与花生,中火翻炒约1分钟,使其表面微微收紧。

5.调味炖煮:
加入生抽、老抽、白糖及适量清水,水量刚好没过食材,小火炖煮10–15分钟。

6.收汁装盘:
待汤汁略微收浓,豆干与花生充分入味后,关火盛出即可。

Braised Dried Tofu with Peanuts

Summary:

This is a rich and savory vegetarian dish, where firm dried tofu and tender peanuts are slowly braised to absorb deep, flavorful seasoning.

Ingredients:

Dried tofu 200g (cut into pieces)
Peanuts 100g (soaked for 2 hours)
Soy sauce 2 tbsp
Dark soy sauce 1 tsp
Sugar 1 tbsp
Salt to taste
Star anise 1
Water as needed
Cooking oil 1 tbsp

Instructions:

1.Prepare ingredients:
Cut the dried tofu into pieces. Soak peanuts until slightly swollen, then drain.

2.Blanch peanuts:
Boil peanuts in water for 2 minutes, then remove and set aside.

3.Heat and sauté spices:
Heat oil in a pan, add star anise, and sauté over low heat until fragrant.

4.Stir-fry main ingredients:
Add dried tofu and peanuts, stir-fry over medium heat for about 1 minute.

5.Season and simmer:
Add soy sauce, dark soy sauce, sugar, and enough water to cover ingredients. Simmer on low heat for 10–15 minutes.

6.Reduce and serve:
When the sauce thickens and flavors are absorbed, turn off the heat and serve.
