莲藕炒花生

简介:

这是一道口感丰富的斋食家常菜,莲藕清脆爽口,花生香酥醇厚,简单翻炒即可呈现层次风味。

材料:

莲藕 250克(去皮切片)
花生米 80克(提前浸泡)
盐 适量
白胡椒粉 适量
食用油 1汤匙

做法:

1.准备食材:
莲藕去皮切薄片,放入清水中浸泡防止氧化变色,花生米提前浸泡备用。

2.焯水处理:
锅中烧开水,将莲藕片焯水1分钟后捞出沥干。

3.花生预熟:
另起锅加水,将花生米煮至微熟后捞出备用。

4.热锅翻炒:
热锅加油,放入花生米翻炒片刻,再加入莲藕片大火快炒约1分钟。

5.调味出锅:
加入盐和白胡椒粉调味,翻炒均匀后关火,盛出即可食用。

Stir-Fried Lotus Root with Peanuts

Summary:

This is a textured vegetarian dish combining crisp lotus root and nutty peanuts, quickly stir-fried for a balanced and savory flavor.

Ingredients:

Lotus root 250g (peeled and sliced)
Peanuts 80g (soaked in advance)
Salt to taste
White pepper powder to taste
Cooking oil 1 tbsp

Instructions:

1.Prepare ingredients:
Peel and slice the lotus root, soak in water to prevent discoloration. Soak the peanuts in advance.

2.Blanch lotus root:
Bring water to a boil, blanch the lotus root slices for 1 minute, then drain.

3.Pre-cook peanuts:
In another pot, boil the peanuts until slightly tender, then remove and set aside.

4.Stir-fry:
Heat oil in a pan, stir-fry the peanuts briefly, then add lotus root and stir-fry over high heat for about 1 minute.

5.Season and serve:
Add salt and white pepper powder, mix well, turn off the heat and serve.
