拔丝红薯

简介:

这是一道外酥内软的甜口斋食家常菜,红薯香甜绵软,裹上糖浆后拉丝效果明显。

材料:

红薯 300克(切块)
白糖 100克
食用油 适量

做法:

1.准备食材:
红薯去皮切滚刀块,清洗后沥干水分。

2.油炸红薯:
锅中加油烧至五成热,放入红薯块炸至外表金黄酥脆,捞出沥油。

3.熬制糖浆:
锅中留少量油,加入白糖,小火加热至糖融化并呈浅黄色。

4.裹糖拉丝:
倒入炸好的红薯快速翻炒,使其均匀裹上糖浆。

5.完成装盘:
趁热盛出即可食用,食用时可拉出糖丝。

Candied Sweet Potatoes

Summary:

A crispy-on-the-outside, soft-on-the-inside sweet vegetarian dish, coated in caramelized sugar that creates a signature pulling effect.

Ingredients:

Sweet potatoes 300g (cut into chunks)
Sugar 100g
Cooking oil as needed

Instructions:

1.Prepare ingredients:
Peel and cut the sweet potatoes into chunks, rinse and drain well.

2.Deep-fry potatoes:
Heat oil to medium temperature, fry the sweet potatoes until golden and crisp, then remove and drain.

3.Make caramel:
Leave a small amount of oil in the pan, add sugar, and heat on low until melted and lightly golden.

4.Coat evenly:
Add the fried sweet potatoes and stir quickly to coat with caramel.

5.Finish and serve:
Serve immediately while hot, allowing the sugar to form strands when lifted.
