Red Bean and Lotus Seed Porridge
Summary:
This is a sweet and nourishing vegetarian porridge, with red beans and lotus seeds slowly simmered until soft, offering a rich and comforting taste.
Ingredients:
Red beans 100g
Lotus seeds 50g (core removed)
Rice 50g
Water 1200ml
Rock sugar to taste (optional)
Instructions:
1.Prepare ingredients:
Rinse the red beans, lotus seeds, and rice thoroughly. Soak the red beans and lotus seeds for at least 4 hours to reduce cooking time.
2.Boil the porridge base:
Add the soaked red beans, lotus seeds, and rice to a pot with 1200ml of water. Bring to a boil over high heat.
3.Simmering:
Reduce to low heat, cover, and simmer for 50-60 minutes, stirring occasionally to prevent sticking.
4.Adjust sweetness:
Once the red beans and lotus seeds are soft, add rock sugar to taste and continue cooking until fully dissolved.
5.Serving:
Let the porridge cool slightly before serving. Enjoy it warm or chilled as desired.
