Stir-fried Pumpkin Shoots

Summary:

This is a light and tender vegetarian dish, where stir-fried pumpkin shoots retain their fresh and crisp texture, complemented by simple seasoning.

Ingredients:

Pumpkin shoots 300g (trimmed and washed)
Red bell pepper 50g (sliced, for color and flavor)
Soy sauce 1 tbsp
Vegetarian oyster sauce 1 tbsp
Salt to taste
White pepper powder to taste
Cooking oil 1 tbsp
Water as needed

Instructions:

1.Prepare ingredients:
Trim the tough stems from the pumpkin shoots, wash thoroughly, and drain. Slice the red bell pepper.

2.Blanching:
Bring a pot of water to a boil, blanch the pumpkin shoots for 20 seconds, then drain to retain their green and crisp texture.

3.Stir-frying pumpkin shoots:
Heat oil in a pan, add the pumpkin shoots, and stir-fry quickly for 30 seconds to ensure even cooking.

4.Adding seasonings:
Pour in soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Stir well to combine.

5.Finishing:
Add the red bell pepper, toss quickly, and let the sauce slightly reduce. Turn off the heat and serve immediately.
