Stir-fried Straw Mushrooms with Zucchini
Summary:
This is a light and flavorful vegetarian dish, combining the umami taste of straw mushrooms with the crisp tenderness of zucchini, quickly stir-fried to retain their natural flavors.
Ingredients:
Straw mushrooms 150g (halved)
Zucchini 300g (sliced)
Red bell pepper 50g (sliced)
Soy sauce 1 tbsp
Vegetarian oyster sauce 1 tbsp
Salt to taste
White pepper powder to taste
Cooking oil 1 tbsp
Water as needed
Instructions:
1.Prepare ingredients:
Wash and halve the straw mushrooms, slice the zucchini, and julienne the red bell pepper.
2.Blanching:
Bring a pot of water to a boil, blanch the straw mushrooms for 1 minute to remove impurities, then drain.
3.Stir-fry mushrooms:
Heat oil in a pan, add the straw mushrooms, and stir-fry for 2 minutes until fragrant and slightly softened.
4.Add zucchini and seasonings:
Add the zucchini slices and stir-fry for 1 minute, then season with soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Mix well.
5.Finish and serve:
Add the red bell pepper, toss quickly, and let the sauce slightly reduce before turning off the heat. Serve immediately.
