Weekly Buddhist Cuisine Menu

Nourishing Burdock Hotpot

Summary:

This is a warm and nourishing vegetarian hotpot, where the earthy aroma of burdock root blends with a variety of vegetables and mushrooms to create a delicious and wholesome broth.

Ingredients:

Burdock root 200g (peeled and sliced diagonally)

Chinese yam 100g (peeled and sliced)

Red dates 6 pieces

Goji berries 10g

Shiitake mushrooms 100g (sliced)

Enoki mushrooms 100g (trimmed)

Tofu 200g (cubed)

White radish 100g (cubed)

Vegetarian broth 1000ml (or water)

Soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

Salt to taste

White pepper powder to taste

Instructions:

1.Prepare ingredients:
Peel and slice the burdock root diagonally, peel and slice the Chinese yam, remove pits from red dates, slice shiitake mushrooms, cut tofu into cubes, trim enoki mushrooms, and rinse the goji berries.

2.Make the broth:
Pour vegetarian broth or water into a pot, add burdock root, white radish, red dates, and goji berries. Bring to a boil, then simmer for 20 minutes to develop flavor.

3.Add main ingredients:
Add shiitake mushrooms, enoki mushrooms, Chinese yam, and tofu. Season with soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Simmer for another 10 minutes.

4.Finish and serve:
Once all ingredients are tender and the broth is flavorful, turn off the heat and serve hot. Enjoy with rice or dipping sauces.
