Stir-fried Chinese Yam

Summary

This is a nutritious and crunchy vegetarian dish, with naturally sweet and tender Chinese yam, simply stir-fried to retain its fresh flavor.

Ingredients

Chinese yam 300g

Carrot 50g (optional, for color and flavor)

Green bell pepper 50g (optional, for texture)

Soy sauce 1 tbsp

Vegetarian oyster sauce 1 tbsp

Salt to taste

White pepper powder to taste

Cooking oil 1 tbsp

Water as needed

Instructions

1.Prepare ingredients:

Peel and slice the Chinese yam (soak in light saltwater to prevent oxidation), and slice the carrot and green bell pepper.

2.Blanching:

Bring a pot of water to a boil, blanch the Chinese yam for 30 seconds, then drain.

3.Stir-frying Chinese yam:

Heat oil in a pan, add the yam slices, and stir-fry for 1 minute.

4.Adding ingredients:

Add the carrot and green bell pepper, stir well, then add soy sauce, vegetarian oyster sauce, salt, and white pepper powder. Continue stir-frying.

5.Finishing:

Add a little water, cover, and cook for 1 minute until the yam is tender but still crisp. Turn off the heat and serve.
