Coix Seed and Red Bean Porridge
Summary:
This is a soft and nourishing vegetarian porridge, with coix seeds and red beans slowly simmered to a smooth and comforting texture.
Ingredients:
Coix seeds 100g
Red beans 100g
Water 1200ml
Rock sugar to taste (optional)
Instructions:
1.Prepare ingredients:
Rinse the coix seeds and red beans thoroughly, then soak them in water for 4 hours or overnight to reduce cooking time.
2.Boiling process:
Add the soaked coix seeds and red beans to a pot with 1200ml of water, and bring to a boil over high heat.
3.Simmering the porridge:
Reduce to low heat, cover, and let it simmer for 50-60 minutes, stirring occasionally to prevent sticking.
4.Adjust sweetness:
Once the coix seeds and red beans are soft, add rock sugar to taste, and continue cooking until the sugar fully dissolves.
5.Serving:
Let the porridge cool slightly before serving. Enjoy it warm or chilled as desired.
